Animal Cupcakes


ingredients :

    CUPCAKES:

    • 2 1/4 cups all-purpose flour
    • 2/3 cup unsweetened cocoa powder
    • 1 teaspoon salt
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/2 cup (1 stick) unsalted butter or margarine, at room temperature
    • 1 cup sugar
    • 1 teaspoon vanilla
    • 2 eggs
    • 2 egg whites
    • 1 1/4 cups milk

    CUPCAKE FROSTING:

    • 1/2 cup (1 stick) unsalted butter or margarine, at room temperature
    • 6 cups sifted confectioners' sugar
    • 1/4 cup milk
    • 1 teaspoon vanilla
    • Pinch of salt
    • Liquid food coloring
    • Assorted candies

    directions :

    1. Heat oven to 350 degrees F. Line 24 medium-size muffin-pan cups with paper liners.
    2. Mix flour, cocoa, salt, baking soda and baking powder in bowl.
    3. Beat butter, sugar and vanilla in large bowl until light and fluffy. Add whole eggs and whites, one at a time, beating well after each addition. Alternately beat in flour mixture with milk, beginning and ending with flour mixture. Spoon scant 1/4 cup batter into each prepared muffin cup.
    4. Bake in 350 degrees F oven for 25 minutes or until wooden pick inserted in centers comes out clean. Remove cupcakes to racks to cool.

    PREPARE CUPCAKE FROSTING:

    1. Beat butter or margarine, in medium-size bowl with electric mixer until fluffy. Gradually beat in sifted confectioners sugar alternately with milk and vanilla until smooth and good spreading consistency. Beat in pinch of salt.
    2. Frost cupcakes, tinting batches of frosting with food coloring for desired colors. Decorate tops of cupcakes, using candies.

    Dalmatian Cupcakes


    ingredients :
    • 2 packages cream cheese, softened (3 ounces each)
    • 1/3 cup sugar
    • 1 egg
    • 1 1/2 cups miniature or regular semisweet chocolate chips
    • 1 box Betty Crocker SuperMoist devil's food cake mix
    • 1 1/3 cups water
    • 1/3 cup vegetable oil
    • 3 eggs
    • 1 container Betty Crocker Rich & Creamy or Whipped vanilla frosting


    directions :

    1. Heat oven to 350 degrees F (325 degrees F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
    2. In medium bowl, beat cream cheese, sugar and 1 egg with electric mixer on medium speed until smooth. Stir in 1 cup of the chocolate chips; set aside.
    3. In large bowl, beat cake mix, water, oil and 3 eggs on low speed 30 seconds. Beat on medium speed 2 minutes. Divide batter among muffin cups (1/4 cup in each). Top each with 1 heaping teaspoon cream cheese mixture.
    4. Bake 17 to 22 minutes or until tops spring back when touched lightly. Cool 10 minutes in pan. Remove from pan; cool completely, about 30 minutes.
    5. Frost with frosting. Sprinkle with remaining 1/2 cup chocolate chips. Store loosely covered in refrigerator.

    TIP:

    1. High Altitude (3500-6500 ft): Makes 30 cupcakes.
